BLT Salad

5 cups salad greens (or fresh spinach)--this is approximate
2 cups grape or cherry tomatoes--halved
1/2 lb bacon, cooked and crumbled
2 hard boiled eggs, chopped
*Poppy Seed dressing (I'm sure you can use any kind, but the following is a good homemade one I like)

*Poppy Seed Dressing
1/2 cup mayo
1/2 cup sugar
1/4 cup cider vinegar
1 to 2 Tbsp poppy seeds

I like to mix the sugar and vinegar well first and then add the mayo and poppy seeds. If you keep your poppy seeds in the freezer they last a lot longer before going rancid.

Pineapple Cole Slaw

3/4 cup mayo
2 Tbsp white vinegar
4 Tbsp sugar
1 tsp celery seed
1 head cabbage, shredded
1 can pineapple, well drained (You can use any size, tidbits or crushed. I prefer 20oz crushed)

In a large bowl, combine mayo, vinegar, sugar, & celery seeds. Add cabbage and pineapple.

Fluffy Fruit Salad

1 (8oz) Whipped topping (like Cool Whip)
3 Tbsp (dry) jello-- raspberry or strawberry
1 can (20oz) crushed pineapple, well drained
1 can (16oz) fruit cocktail, drained
2 large apples, diced
2 large firm bananas, diced

In a large bowl, combine whipped topping and dry jello. Stir in fruit.

Grandma's Potato Salad

3 large potatoes, cooked and chopped (This is 3 huge Costco size potatoes. If using smaller, then use a couple more.)
12 eggs, boiled and grated (You can chop, but grating is easier and faster.)
1 stalk celery, chopped very fine
1 bunch green onions, chopped fine
2 Tbsp. finely grated onion--with juice
2 tsp salt
1/2 tsp pepper
1 tsp sugar

Mix well, then add dressing. The taste is much better if the dressing is mixed in with the potatoes and eggs still very warm from cooking, it blends the flavors.


Dressing:

2 cups Mayo (Best Foods is great)
1/3 cup Miracle Whip
(If this is too dry you can mix in a little milk, but I never do.)

Good luck. This is my mother's recipe that I wrote down while she made it from her wheelchair! I think I was the first one to ever try and get it down on paper. She says a really good potato salad is just egg salad with potatoes in it. I think I agree...

Ranch Potato Salad

Original recipe:

2 lbs. red potatoes
1 cup ranch dressing
1 cup shredded cheddar cheese
1 pkg. (2.8oz) real bacon bits (I think it’s Hormel—you can find it in the salad dressing area in the store)
garlic salt
pepper

Cook and cube potatoes. Combine all ingredients and chill.

Okay, my version:

Regular potatoes, cooked and cubed, skin on—as many as you want
Shredded cheddar cheese
Bacon bits (I’ve used real and Bacos and you can hardly tell the difference after it sits. Sometimes I freeze leftover bacon and I've used that too. Great!)
(Optional: chopped green onion Love this addition!)
garlic salt
pepper
Add Ranch until it’s as moist as you want it to be.

My family calls this Baked Potato Salad because it tastes just like a loaded baked potato.
